Oatmeal is comfort- when it's dark, and yet I'm up and dressed and walking late out the door. It's comfort when it's freezing out and sometimes in, and all I really want to do is snuggle back in the warmth of our bed.
The kids really like it too, except when I make it with real oats and then they are like, "Uggg...what are these little oval things- this is not oatmeal..."
We were at a loss, because I do not like what flavored, packaged oatmeal has in its convenience. Too many things I can't spell or pronounce, so we fought over eating real oatmeal, and mostly I ate it alone and they had something else.
BUT...when I got this season's ChopChop,
and I saw how easy it was to take those lovely oval oats and turn them into the happily eaten instant oatmeal, I quickly made a batch.
and, yes, it says sugar, but what I love is I know what kind of sugar it is, and I know how much I put in. I also know that I put a whole bunch of walnuts in the first batch and a lot of dried apples and flax seed in the second.
The kids though...they just know that, "It's the best you've ever made, Mom".
Instant Oatmeal-
Put 3-6 cups of oats in a food processor
Add 1-2 TB of brown sugar (organic)
Add 1-2 tsp of salt
Add 1-2 tsp of cinnamon
Add dried fruit, nuts, flax as you like
Blend until powdered.
Store in air tight glass jars or containers.
Add hot water and enjoy!!
ChopChop really is a great magazine. I've blogged about it here if you need more reason to join.

Great idea! I hope to gain more recipes like that in the Whole Foods workshop

I enjoy Chop Chop! We added dates to ours and were able to cut the sugar back even though it's a fraction of what you'd get in "store bought." My little ones who are used to a very long wait for oatmeal have LOVED this instant gratification. It has provided FUN with the convenience.
